Just Because a Dinner, sandwich or snack comes from a vending Booth or a catering Banquet, There is no excuse for dry, low quality, tiny portion or bad presentation. We work at everything we do to provide quality, originality and an experience for the taste buds. Everything I can do is homemade never bag, bottle or can. In 20 years I have never believed in processed food nor will I serve something I won’t eat myself. Even a Hot Dog can be an experience and made memorable with the right ingredients. The customers we are gaining like us and look for us because they know that each item is homemade, flavorful and made with fresh clean ingredients. Our menu is different for every show so that we can provide that originality that is so missing at fairs today. Our customers tell us “Now that we have eaten here, where are you going next so we can be there.”
After 20years in the kitchen at my last restaurant in Buffalo, New York, I learned that what I was really missing was being out front with my customers and having direct contact with them. It’s great to be in the kitchen and hear the compliments and praise but to be there for that look in someone’s eyes when they bite into something truly unique and invigorating as they remember that food can be a real pleasure over simple food.This is what I found I had been missing all these years and the truly most rewarding part of this adventure!
